A British researcher, Dr. D.P Burkitt, believes one of the easiest ways to prevent all sorts of illnesses, is to avoid constipation. Appendicitis, diverticular diseases, hemorrhoids, hiatal hernias, and even varicose veins can all be caused by straining to pass small, hard stools.

Just one apple with its skin contains 4 to 5 grams of fiber - the most important nutrient in keeping your bowels working like a well-oiled machine. Keeping yourself regular without relying on harmful laxatives could be as easy as replacing that afternoon snack of potato chips or cookies with a crisp, delicious apple. And think of the calories you'll save. The average apple has about 80 calories while a serving of chips weighs in at 150 calories and you'll get about 200 from just a few cookies.

But that's not all apples can do. They're also good for diarrhea, thanks to an ingredient called pectin. This carbohydrate has a congealing effect in your intestines that helps firm things up and return you to normal. Applesauce is actually the best apple product for diarrhea, since it's made without the high.-fiber skin. But watch out for extra sugar. Some brands of applesauce dump a truckload of sweeteners into an otherwise healthy food, and too much refined sugar could make your diarrhea worse.

By now you know antioxidants can protect you from many of the diseases that seem to be a part of aging. In fact, so many people are taking supplements for antioxidant protection that it's become a multibillion-dollar industry. But the evidence is mounting that whole foods can do more for you than pills.

When scientists compared a 1,500-milligram vitamin C supplement to one small apple, the results were astounding - the antioxidant values were equal. That means a fresh apple has more than 15 times the antioxidant power of the recommended daily dose of vitamin C. And that's just for starters. The researchers also found an ordinary apple was able to stop the growth of colon and liver cancer cells in test tubes. Unpeeled apples were especially effective. The question you need to ask yourself: Why waste money on flavorless supplements when you can get better antioxidant firepower from a sweet, crunchy fruit?
Cuts your risk of heart disease. Sometimes it's hard to remember which food is good for which part of your body. The next time you pick up an apple, examine it carefully. It's shaped a bit like a heart - and that should help you remember apples are good for your heart.

It's the magnesium and potassium in apples that help regulate your blood pressure and keep your heart beating steadily, and it's the flavonoid quercetin, a naturally occurring antioxidant, that protects your artery walls from damage and keeps your blood flowing smoothly.

In fact adding flavonoid-rich foods like apples to your diet has been scientifically confirmed to lower your risk of heart disease. There's proof of this in a study of Japanese women who ate foods high in quercetin. They were less likely to get coronary heart disease than other women and they had lower levels of total and LDL, or bad, cholesterol.

Strikes at the heart of strokes.
Apples are even a smart choice for helping avoid strokes. Scientists aren't sure which ingredient in this multi-talented fruit to credit, but the connection is clear - people who regularly eat apples are less likely to have strokes than people who don't.

Protects your joints.
In areas of the world where fruits and vegetables make up a large part of the diet, very few people get arthritis. Compare this to modernized countries where fruits and vegetables have been replaced with fast, processed food and you'll find up to 70 percent of the population suffers from some form of arthritis. Just a coincidence? Not according to nutrition experts. They link this trend in part to boron, a trace mineral many plants, including apples, absorb from the soil.

If you eat like most people, you'll get about 1 to 2 milligrams (mg) of boron a day, mostly from non-citrus fruits, leafy vegetables, and nuts. Experts believe, however, you need anywhere from 3 to 10 mg a day to affect your risk of arthritis. To boost your boron intake to this level, you'd have to eat more than nine apples a day.

This is probably an unreasonable amount for most people, but don't despair. Pair an apple with other boron-rich foods like a few tablespoons of peanut butter and a large handful of raisins, and you'll not only have a delicious afternoon snack, but you'll make your joint-saving quota of boron at the same time.
Helps you breathe deeply. Your lungs are assaulted every day by cigarette smoke, air pollution, pollen, and other air-borne nasties.

On top of that perhaps you suffer from asthma, emphysema, or similar lung condition. If all you want to do is take a deep breath, then grab an apple.
A five-year study of more than 2,500 men from Wales found those who ate five or more apples per week were able to fill their lungs with more air than men who didn't eat apples. Experts believe you might be getting some special protection from the antioxidant quercetin. Unfortunately, eating apples can't reverse a lung condition you already have, but you just might add a new line of defense against further damage.

Pantry pointers
Buy apples that are unbruised, firm, and have good color. Take them out of their plastic bag and store them in your refrigerator - loose in the produce bin or in a paper bag is best. And since they will absorb odors, keep them away from strong-smelling foods like garlic and onions.

Just Say No: Healthy Eating and Peer Pressure



If you are on a diet or simply enjoying a healthy lifestyle, than you probably know that peer pressure to eat foods that are not good for you is a major part of your life. If you are concerned about nutrition and the food that goes into your mouth, don't worry-there are ways to overcome peer pressure. It simply takes a little know-how to get people off your back!

Parties are a major source of peer pressure, especially with alcohol. However, remember that alcohol contains hundreds of calories in just one drink and of little to no nutritional value. When you go to a party, people may pressure you to have a drink and relax, and it can be difficult to say no when they are constantly trying to convince you. Instead, offer to drive to the bar instead. This way, you re the designated driver, so people won't want you to drink and, in fact, they will probably be purchasing you waters and maybe even helping to pay for your gas. It's a win-win situation for everyone.

Another time when you may feel pressured to eat is at work when the boss orders lunch for everyone at a meeting or when you have to visit a client. Instead of giving in to temptation, simply and politely decline, by letting your boss know in advance or order a meal that is more nutritious and request only a small serving.

Baby showers, weddings, birthday parties, and other special events can also wreak havoc on your diet and nutrition, even if you are good at resisting temptation on your own. When someone hands you a piece of cake and won't take no for an answer, it can be difficult to know what to say! Here, little white lies might be appropriate. For instance, saying that your stomach was upset earlier in the day will convince a person that you don't want to eat at the moment or pretending to have a chocolate allergy will get people to allow you to enjoy the party without a hassle surrounding food. Remember, however, that while refusing foods of poor nutritional value is great, you should not stop eating good foods or start missing meals. Many Uses For The Humble Dandelion



Many people think of Dandelions as a nuisance. This time of year, I always hear folks sharing ideas on how to get rid of those darn dandelions and which poisons work the best. On the other end of the spectrum, there are those throughout the world who welcome and embrace the dandelion as both food and medicine. The dandelion is a wild vegetable that is abundant, extremely nutritious and still free. The parts used are mostly the leaves and root. They are high in vitamin A, B, C, beta carotene, minerals and fiber. Dandelions act as a natural diuretic and are a popular blood and liver cleanser. They are also considered a general tonic to help nourish and strengthen the liver, gallbladder, pancreas, spleen, kidneys, stomach and intestines. Dandelions have been known to help with anemia, cirrhosis of the liver, hepatitis, and jaundice, reducing serum cholesterol and uric acid levels. Dandelions have even relieved menopausal symptoms for some. Hot flashes have been linked to liver congestion in certain individuals. When there is liver congestion, previously used hormones that are ready for discard become trapped in the liver, recycled and used repeatedly, eventually causing toxicity.

Then there are those who just love to cook with dandelions. Dr Peter Gail, founder and president of The Defenders of Dandelions, has researched recipes and folklore on wild plant use by people throughout the world. He has collected over 3000 recipes for 105 plants, including over 600 for dandelions. He began eating weeds as a young boy as a necessity for survival after a friend introduced Gail's family to them. In 1994, to promote the use of dandelions, Dr Gail's company, Goosefoot Acres, decided to sponsor a national dandelion cook off in Dover Ohio. It is held the first weekend in May every year and draws people from all over the country eager to enter their favorite dandelion dish in the contest.

If you are ready to go out and pick some dandelion greens, it's best to pick the leaves when they are young and tender, especially if you are going to eat them raw. This is before it flowers. After it flowers, merely cut the plant back to the root and in about 2 weeks or so you will have more tender leaves. This can be done all summer. It may be unhealthy to pick and eat dandelions from soil that has been exposed to repeated applications of herbicide. Chris Atzberger of Columbus Ohio has a recipe for the Classic Dandelion Salad that serves 4. Half lb. fresh dandelion leaves, chopped, 1 small onion minced, 8 oz. fresh mushrooms chopped, 2 T. balsamic vinegar, 3 T. olive oil, half t. salt, 0ne eighth t. black pepper. Toss and serve. I also like mixing dandelion greens in with my other salad greens. They can also be cooked like any green. I wouldn't discard the water after draining, for that's were most of the nutrients are. My wife prefers steaming the greens in a little water or sautéing them in a little olive oil, garlic, salt and pepper. Here is a refreshing dandelion and tomato appetizer recipe offered by Gail Harshbarger of Akron Ohio that would complement at any summer picnic. 15 Roma tomatoes or 8 other tomatoes, half c. onions, finely chopped, 1 clove garlic finely minced, one fourth c. sweet yellow pepper diced, one fourth c. sweet red pepper diced, 2 c. dandelion leaves, chopped, 1 c. feta cheese crumbled. One half to three fourth cup c. red wine or Italian dressing, half teaspoon of your favorite mixed dry herbs, 1 t. Worcestershire sauce, One fourth c. Parmesan cheese. Mix all ingredients in a bowl except for the tomatoes. Chill for 1 hour. Cut tomatoes in half and scoop out the inside. Stuff dandelion mixture into the tomatoes and sprinkle with Parmesan cheese. My wife usually adds what she scooped out of the tomatoes to the dandelion mixture before chilling. It can also be baked.

The dandelion root is the part used mostly for medicinal purposes. It may be dug up, dried, cut up then made into a tea. It must be simmered for 30 minutes or so. If you would like to enjoy some of the health benefits of dandelion but are not that adventurous, dandelion tea may be purchased as well as the capsules.

The dandelion root is also used to make a tasty and nutritious coffee substitute called, dandy blend. Dandy blend had a delicious coffee-like flavor that can also be used in baking or added to vanilla ice cream to give a delicious creamy coffee flavor.

When I see dandelions, I admire their beauty and give them thanks for all their medicinal gifts…so please be kind to your dandelions.

Do you really know what is healthy food?
We all try and stick to choosing healthy items when grocery shopping or eating out, but how well do we really know our foods? Discover how to find out about reading between the lines, what to look out for in labels and how to dine out healthily.

When shopping in your local supermarket, it's very easy to be attracted to colourful aisles filled with crisps and chocolates. It can sometimes take a lot of will power to resist grabbing a few treats...especially if you are food shopping on an empty stomach!

So the logical choice is to head for the aisles that sell 'healthy' food. But how genuinely healthy is the food that you are buying? It looks healthy, it sounds healthy, but you may actually find that it contains 'hidden' fats, salts and sugars. In short, anything BUT healthy!

Fat free? Sugar free? Calorie free?
Phrases such as 'fat free' and sugar free' sound great in theory, but a closer inspection may be needed. A claim such as 'fat free' usually means that in order for the item to be 'fat free', something else has to be added to make it taste edible.

So check the label at the back to see what has been added to make up for the lack of fat. The product could be significantly high in sugar, and so, even if the product is fat free, it will probably be packed full of calories. The same goes for products boasting a low number of calories or no sugar at all. Again, check the back label because the fat content may be very high.

Also check to see whether the nutritional information relates to the portion size or if it's per 100g. When cooking a meal, think in terms of portion size to get a better idea of how much fat and calories each person will really be consuming.

The Amazing Miracle Food That Really Works

Just when you were getting the Nutrition Pyramid down to an exact science, the USDA goes and releases an all new nutrition and diet plan for healthy Americans. On April 19, 2005, the United States Department of Agriculture unveiled its new My Pyramid nutrition pyramid. Available at its own web site (http://www.mypyramid.gov), the new guidelines aren't so much NEW as they are more in depth, detailed and helpful.

For starters, My Pyramid can be personalized. On the main page, you have the option of entering your age, gender and activity level. Simply click "submit" and get a recommendation that's more specific than '6-11 servings of grain per day'. Instead of those vague, wide-ranging recommendations, you'll get a pyramid that says, "6 ounces of grain products", or 2 1/2 cups vegetables.

Even if that were the ONLY improvement on the new site, it would be tremendous. No more guessing whether you should aim for closer to six servings or closer to eleven. The nutrition calculator factors in your age, gender and activity level (above your normal daily routine) to come up with a recommended caloric intake. From there, it breaks down the calories by food group, and tells you exactly how much of each group you should eat per day for a healthy diet. It's far easier to figure out what 2 cups of milk is than it is to figure out how much '3-5' servings of dairy is!

But it doesn't stop there. Beneath the pyramid chart with the specific serving sizes on it, you'll find a list of links to 'tips' for making the healthiest choices from each food group - divided by food group.<

Oh my Gosh! - What should I eat?

Super foods are full of anti-oxidants, vitamins and minerals but they also contain amino acids, which are the basic structural building blocks of proteins. Proteins make up the bulk of all your cells structure. They also act as enzymes for cellular reactions. There are eight essential amino acids they are:
#1 = Tryptophan which reduces anxiety and depression, helps with migraines, helps the immune system, reduces heart spasms, it is also a natural relaxant and aids in normal sleep, taken with Lysine it reduces cholesterol levels in the blood.

#2 = Lysine improves formation of bone cartilage and connective tissues, it aids in the absorption of calcium, it aids in the production of enzymes, hormones and the production of antibodies that help fight diseases and illness.

#3 = Methionine is the supplier of sulfur which prevents problems with hair, nails and skin. Methionine aids in the liver's production of lecithin, reduces liver fat and helps protect the kidneys. Methionine also aids in reducing bladder irritations and infections and promotes hair growth.

#4 = Phenylalaine keeps you awake and alert, it is used in the brain to produce a chemical that transmits signals between the brain and the nerve cells, phenylalaine helps to improve your memory and also reduces hunger pains.

#5 = Threonine aids in digestion and intestinal tract functions; it also helps reduce liver fat.

#6 = Valine calms emotions and aids with mental vigor; it also aids with muscle coordination.

Tyrosine aids in healthy functioning of the thyroid and pituitary glands, helps to improve memory and transmits impulses to the brain.

Glycine is required during cell production to release oxygen, it also aids in the production of essential hormones in the immune system.

Serine is essential in storing glucose in the muscles and liver, also aids in the immune system and produces a fatty acid cover to protect nerve fibers.

Aspartic acid aids in the removal of ammonia from the body. Ammonia is toxic to the body and aspartic acid helps to protect our body from the poison until it is expressed through the urine.

Glutamic acid helps improve mental capacities, aids in healing ulcers and helps with fatigue.

Alanine is a source of energy for the muscles, brain and nervous system. Alanine produces antibodies that help the immune system.

Cystine is an anti-oxidant and aids in the protection against pollutants, it can help slow the aging process, it is necessary in the production of skin.
Proline is vital in the functioning of joints, and helps to strengthen the heart muscle.

Taurine is necessary in the removal of free-radical waste from the body, it is a factor that is necessary for changes that take place during aging.

Histidine is found in the blood, it is used to treat several diseases such as RA, (rheumatoid arthritis) ulcers, and anemia. These are just a few of the amino acids that are essential in your diet for better health.

It is very important that you choose foods that are rich in amino acids as well as vitamins and minerals for your health.

Super foods are believed to contain the highest numbers of amino acids, vitamins and minerals. If you go to Google and type in super foods, you will find several sights, all telling you about the same thing, that eating a natural diet will protect you from several diseases and illnesses. Here are the ones that most people agree on, they are readily available in markets: Apples, avocados, tomatoes, bananas, cabbage, carrots, garlic, onions, potatoes, sweet potatoes, oranges, cantaloupe, broccoli, watermelon, dry beans, spinach, kale, salmon and other oily fish, flax seed, oats, soya, blueberries, cranberries, squash, almonds, beets, ginger, olive oil, tea, chili peppers, mushrooms, papaya, pineapple, kiwi, mangoes, apricots, pumpkin, walnuts, yogurt, parsley, sage, rosemary, cinnamon, brussel sprouts, lentils, pomegranates, concord grapes and brazil nuts.

After much research I found that not all of the foods I studied were true super foods. You have to consider where and how your food is grown. They do however; contain the necessary ingredients to be beneficial in your diet. It is absolutely true that you need various foods that react together for improved benefits in the body. If you consume an avocado you will reap the rewards but if you consume a grapefruit with your avocado they work as a team to fight disease and illness. This is true for most foods, there are however exceptions and they are; Wild salmon, tomatoes, broccoli and broccoli sprouts, kale, spinach, garlic, onions, blueberries, walnuts, pomegranates, depending how and where they are grown, then there's goji berries, mulberries, goldenberries, sauco berries, acai berries, noni fruit, mangosteen fruit, bee pollen, royal jelly, green tea, sea vegetables, quinoa, and umeboshi plum.

Sea vegetables are true super foods, they contain significant amounts of protein and they also contain all the minerals found in the ocean. They offer 10 to 20 times the vitamins and minerals found in plants grown on land with just a few exceptions. There is a reason for this; we, as a population, have depleted our soils of the necessary nutrients that plants absorb. We also use chemicals and pesticides on our crops, these chemicals and pesticides are non-selective and destroy everything even the micro bacteria and micro fungi that is digested by the plants. When you purchase an apple from the store it is usually lacking most of the minerals that the soil once provided, minerals that are essential to our health. This is not true for the sea vegetables, the ocean is still productive, we have yet to destroy it and therefore it is a rich source for your health. Kelp, blue-green algae, spirulina, chorella, dulse, alaria, sea lettuce, irish moss, kombu, wakame, and nori are all rich in vitamins, minerals and all the essential amino acids.

Some fruits that are grown wild in other parts of the world are also true super foods and are still rich in nutrients because the soils are not depleted. The Mangosteen fruit is native to South East Asia, it has been studied for 20 years by independent labs and doctors for its medicinal uses; it contains 25,000 anti-oxidants, the highest number ever found in one food source, it contains amino acids as well as a vast majority of vitamins and minerals. The Goji berry is native to Asia; it contains amino acids and essential minerals and vitamins. Mulberries are native to Turkey; they are high in vitamin C, iron, calcium and protein. Goldenberries are native to Colombia and Peru, Sauco berries are native to South America, Umeboshi Plum is native to Japan, Noni fruit is native to Polynesia. The Acai berry has 30 times more anti-oxidants than blueberries, all eight essential amino acids and trace minerals. The list goes on, but what you eat is up to you, your health is in your hands

If you are already suffering with a disease or illness or you're prone to certain diseases or illness, due to family history, then there are a few things you need to know. If vegetables are cooked at over 118 degrees the heat will destroy most of the beneficial properties. You can not eat as much as you need, which is 8 to 10 servings a day, but there is a solution, you can juice your way to health. The food pyramid has changed which came as no surprise to me, I still have trouble with this type of system, not everyone needs the same things, and every person on this planet is different and has different nutritional requirements. There are some terms you need to understand before we continue:

Vitamins = nutrients that are necessary to your health, a shortage or an excessive amount for extended periods can cause health problems.

Phytonutrients = these are anti-oxidants that are plant-derived; they help to improve your health but are not required.

Carotenoids = they are in the dark coloring of the skin of fruits and vegetables (pigments), they are also anti-oxidants; there are dozens of carotenoids.

Free-radical = they disrupt living cells by attacking them, free-radicals are missing an electron and they steal one from other cells, they are responsible for all diseases and illness due to their damage. Free-radicals are in air and water pollution, and in junk foods we eat. You can not escape from them; they are a part of life. Free-radical damage accumulates with age if you do not protect yourself.

Anti-oxidants = they neutralize free-radicals by donating their extra electron; all anti-oxidants have an extra electron. Anti-oxidants protect us from free-radical damage. Anti-oxidants are called scavengers; they prevent cell and tissue damage which leads to disease and illness. They are absolutely required for optimum health in very large numbers every day.

Synergy = nutrients that are taken in combinations; these combinations cause the nutrients to become more powerful then when taken alone.

Notice that the list above states that people agree that blueberries are a super food. Not all foods have been studied, take the cherry; it's deep rich red color is full of carotenoids or it would not have that great color. The cherry has not been extensively studied yet. What does this mean for you? Be wise and eat fruits and vegetables that have the darkest and richest colors, in combinations, to receive maximum benefits. Do not make the mistake that others have made and write off all the unlisted fruits and vegetables, everything that grows in the ground has benefits for your health. Your food choices are a life or death decision, so do your research and find the best solutions for your health.

Beans may reduce the risk of heart disease; lentils support heart health; berries of all kinds have synergistic effects and are scavengers of free-radicals; citrus fruits are all full of anti-oxidants; vegetables steamed on low heat are a great source of fiber and complex carbohydrates; sea vegetables are bursting with carotenoids, vitamins, minerals and amino acids and can be found in many forms, tablet or powder. Sea vegetables support your whole body; green leafy vegetables are bursting with eye health nutrients as well as supporting the heart, brain and bones. Nuts help reduce the risk of heart disease; oats are a prime source of complex carbohydrates and full of fiber. Cold water - wild fish, not farm raised, contain beneficial omega-3 fatty acids, necessary for coronary heart health. Wild salmon, trout and tuna all contain different amounts and should all be consumed; seeds and nuts help balance hormones and have anti-oxidant activities; soy packs a punch with its anti-oxidation effects; mangosteen fruit is bursting with anti-oxidants and works in your entire body for your overall health.

There is some evidence that men and women need different nutrients to support biological needs. Men need to protect themselves against prostate cancer, bladder cancer, testosterone levels, sperm counts, heart disease, and high blood pressure. Women tend to be lower in iron than men due to menstruation and this can cause sever fatigue. To get the highest doses of iron you should try buffalo meat, you get an easily digestible 3 milligrams of iron in a 3 oz portion of this very lean meat. In later life women tend to suffer with the dreaded hot flashes. There may be relief found in tofu. If you are on a diet or simply enjoying a healthy lifestyle, than you probably know that peer pressure to eat foods that are not good for you is a major part of your life. If you are concerned about nutrition and the food that goes into your mouth, don't worry-there are ways to overcome peer pressure. It simply takes a little know-how to get people off your back!

Parties are a major source of peer pressure, especially with alcohol. However, remember that alcohol contains hundreds of calories in just one drink and of little to no nutritional value. When you go to a party, people may pressure you to have a drink and relax, and it can be difficult to say no when they are constantly trying to convince you. Instead, offer to drive to the bar instead. This way, you re the designated driver, so people won't want you to drink and, in fact, they will probably be purchasing you waters and maybe even helping to pay for your gas. It's a win-win situation for everyone.

Another time when you may feel pressured to eat is at work when the boss orders lunch for everyone at a meeting or when you have to visit a client. Instead of giving in to temptation, simply and politely decline, by letting your boss know in advance or order a meal that is more nutritious and request only a small serving.
  Baby showers, weddings, birthday parties, and other special events can also wreak havoc on your diet and nutrition, even if you are good at resisting temptation on your own.
